Ingredients
1lb. ground beef
1/2 lb. bacon cut into small pieces
1/2 cup onion chopped
1/2 cup catsup
1/2 cup brown sugar
3 tsp. prepared mustard
1 lb. 5 oz can pork n beans
15 oz can kidney beans
15.8 oz can lima beans
15.8 oz can butter beans

Directions
Saute beef, bacon till meat is lightly browned. Drain off fat. Add rest of ingredients, do not drain pork n beans. Drain off some of the liquid from the rest of the beans. Mix thoroughly and bake uncovered. 350 for 1 hr.

Champagne Chicken

One of Mom's favorite dishes to prepare for guests. Always served it with Baked Rice.

Ingredients
8 boneless chicken breasts
1/2 cup flour
1 teaspoon white pepper
1 teaspoon salt
3 ounces butter
2 tablespoons olive oil
1 1/2 cups champagne (sparkling white wine, brut)
1 cup whipping cream
Directions
1.  Flatten chicken.
2. Dust lightly with the seasoned flour
3. Melt butter and olive oil
4. Add chicken with full side down, saute at medium heat 5 minutes shaking pan to prevent sticking.
5. Turn, add the champagne and continue cooking for 12 to 15 minutes until the chicken is done and the champagne is reduced by half.
6. Add the cream.
7. Cook until sauce is thickened.
8. Correct seasonings and serve.

Baked Sesame Chicken

Ingredients
1/2 cup soy sauce
Chicken breasts, cut into pieces
1 egg, beaten
1/2 cup flour
1/4 cup sesame seeds
1/4 cup butter

Directions

1.Pour soy sauce over chicken in a bowl; chill for 2 hours, turning meat occasionally.
2.Lift chicken from marinade, dip in egg mixed with 2 tablespoons of marinade.
3.Turn pieces in flour mixed with sesame seeds.
4.Melt butter in shallow pan; coat chicken thick side up in a single layer pan.
5.Bake at 375° for 1 hour.
6.Yields 4-6 servings.

Sausage Stuffed Jalapenos

Ingredients
12 whole jalepenos
1 pkg. cream cheese
1 lb. bulk ground sweet Italian sausage (or can use mild)
1 yellow or red pepper, chopped finely
Half of an onion, chopped finely
Salt, pepper, garlic powder to taste

Directions
1. Take out cream cheese to soften.
2. Cook sausage, onion, red/yellow pepper, along with seasonings all
together. Make sure it is mixed and chopped finely. Continue cooking
until all liquid is absorbed. Put into a bowl and cool.
3. Cut jalapeno peppers in half and scoop out the seeds (can use a grapefruit
spoon which makes is a lot easier)
4. Put jalapenos on a sheet try which has been rapped with foil and sprayed
with Pam.
5. Put in oven at 350 degrees for 15 minutes. Take out jalapenos, let cool.
6. Get the cooled sausage mixture and mix with cream cheese, really good.
(Can use hands to get it good and mixed).
7. When jalapenos are cool, stuff each pepper with mixture and form a nice
high mound.
8. Turn the oven on to broil, and cook until tops of jalapenos are lightly
browned.

Tomato and Mozzarella Pasta al Forno with Sausage

Ingredients:
3 or 4 links of Italian sausage (I like it hot)
2 tbsp. extra virgin olive oil
2 garlic cloves, crushed
2-14 oz. cans diced tomatoes
1 tsp. dried oregano
S&P
1 lb. pasta (tubes)
8 oz. mozzarella cheese, cubed
2/3 c. parmesan
Directions:
Cook sausage and cut into bite size pieces, set aside. Heat oil in skillet. Add garlic and cook over medium high heat, 1 min. Add tomatoes and oregano and simmer rapidly, stirring occasionally until thickened, 15 min. Add S&P. Meanwhile, cook pasta. Toss pasta with sauce and sausage. Place half of pasta in an oiled 9×13” dish. Cover with half parmesan and half mozzarella. Top with remaining pasta, then parmesan and mozzarella. Bake at 400° for 15 minutes.

Paul and I really enjoy this and you can really jazz it up as much as you want.

Sesame Seed Cookies

Everyone seems to love these cookies. Mom was a big fan of dunking these in her coffee.

Everyone seems to love these cookies. Mom was a big fan of dunking these in her coffee.

Ingredients
1 pound sesame seeds
7 teaspoons baking powder
6 cups flour
1 teaspoon salt
2 cups Crisco
2 tablespoons vanilla
2 cups sugar
7 eggs

Directions
1. Mix flour, sugar, baking powder and salt.
2. Work Crisco in flour until small beads form. (I use dough hooks on my mixer and mix it that way, my mother-in-law uses a pastry knife by hand)
3. Beat eggs and vanilla with fork.
4. Add to dry mixture by hand until well blended. Form in pencil shapes and roll in sesame seeds.
5. Place on ungreased cookie sheets. Place far apart because the cookies will spread some while baking.
6. Bake 15 to 20 minutes until golden in color.
